This is one of my favourite snack recipes as it has both chocolate and nuts, which I love.

It takes a little more time to make, but it’s absolutely worth it.
These bars are delicious, satisfying, and perfect for curbing sweet or chocolate cravings.

Ingredients
½ cup cashew nuts
½ cup almonds
1½ cups puffed rice
½ cup pumpkin or sunflower seeds
½ cup shredded coconut
½ cup chopped dried fruits
⅓ cup honey (use less if you prefer it less sweet)
½ cup nut butter (softer works best)
100 g dark chocolate

Method

Prepare the dry mix: Blend the nuts, seeds, puffed rice, coconut, and dried fruits separately until there are no large pieces, then combine in a large bowl.

Make the binder:

– If the honey and nut butter are thick, warm them gently in a pan with a little water until smooth.

If they’re already soft and runny, just mix them together in a bowl.

Combine: Add the dry mixture to the nut butter and honey mixture and mix well until fully coated.

Test the texture: Take a spoonful and roll into a ball, if it doesn’t hold shape, add a little more nut butter.

Set the base: Line a baking tray with parchment paper. Spread the mixture evenly and press it down firmly using a spatula or rolling pin. Refrigerate for 2–3 hours until firm.

Add chocolate topping: Melt the dark chocolate in the microwave or over hot water, spread it evenly over the set mixture, and refrigerate for another hour. Avoid chilling too long or the chocolate may crack when cutting.

Cut and store: Slice into bars and store in the refrigerator to keep the chocolate from melting.
