Oat and carrot pancakes:
If you want to have something savoury in the morning this is an easy recipe to follow. Made with just a few ingredients, it is ready within minutes and you will start the day right by having not only oats but some vegetables too. Do experiment and add in your favourite spices when making the mixture. This is for a serves 1 person.
3 tbsp oats
1½ tbsp chopped onions
3 tbsp yogurt
½ small carrot, grated
Sea salt and black pepper to taste
Olive oil to make the pancake
Mix the onions, yogurt, grated carrot and oats well in a large bowl. It should be moist, if dry you can add a little more yogurt. Season to taste.
Heat a pancake pan and brush it with some olive oil. Spoon about half the mixture onto the pan and let it cook on a low heat until cooked, will take about 4-5 minutes. Turn over and cook the other side. Makes 2 very filling pancakes. Serve with a dip or salsa. Serves 1
