Colourful Edamame Salad
Colourful Edamame Salad
To make this salad you need:
1 cup edamame beans
1 cup cherry tomatoes, halved
1 yellow pepper, diced
1/2 cup sweetcorn
1 large handful rocket leaves
Dressing:
1 garlic clove, chopped finely
1/2 tsp extra virgin olive oil
Juice from 1/2 lemon
1/2 tsp chopped chives (or to taste)
Sea salt and black pepper to tasta
Green chili, chopped finely
Combine all the salad dressing ingredients in a jar and mix well.
In a large bowl combine all the salad ingredients and mix in the dressing. Serves 1.
