As the weather warms up you may be looking for some inspiration on making something cooler, light yet filling for a quick lunch.  If you are eating sandwiches, because they are convenient, you have to try my salad recipes and you will see for yourself that they are not difficult to make.

I love eating salads for lunch and don’t get bored of them.  This is because I keep them interesting by varying what I add into them. 

This salad is full of plant based protein, high in fibre and takes less than 30 minutes to make.  Do try this recipe, which is from my Wellness Membership Program.

Ingredients:

1 ½ cups edamame shelled and boiled

¾ cup cherry tomatoes, halved

½ cup sweetcorn

1 cup shredded cabbage, loosely packed

Small bunch chopped parsley

1 carrot, julienned

½ avocado, diced 

Dressing:

Small piece of ginger, minced

Juice from ½ lemon

1 tsp extra virgin olive oil

Sea salt, black pepper and green chili to taste 

Combine all the dressing ingredients in a jar.  Then add all the salad ingredients in a large bowl and mix in the dressing.  Serves 2.
