I love having chia pudding and never get bored as with a variety of toppings there are so many choices.  Plus you can make some extra to have the following day.

Plum Chia pudding

 
1/2 cup chia seeds
1/2 cup coconut milk
1 1/2 cup almond or rice milk
1 tsp honey (optional)
4 ripe plums, remove the seed and dice
4 blackberries
 
Combine the chia seeds, coconut milk, almond milk and honey and pour into two glasses or bowls.  Let this set overnight in the fridge.
 
To make the plum topping:
In a pan add 1-2 tbsp water and the plums and cook on low heat for about 5 minutes.  Then mix in the blackberries and cook for another 2 minutes.
 
Layer the fruit over the chia pudding and serve.  Serves 2
