Quinoa Quiche

1 cup cooked quinoa

1 cup grated zucchini and carrots

1 cup loosely packed baby spinach, chopped

1 tbsp grated cheese

2 large eggs

Mix all the ingredients together in a large bowl. Do ensure the mixture is slightly moist or the quiche will be dry and crumble. If it’s dry you can add in a small egg. Spoon the mixture into 2 small quiche or pie trays that have been lightly oiled and bake at 180°C for 25-30 minutes.  Serve with a side salad or roasted vegetables. Serves 2
