I recently made this salad and wanted to share this delicious recipe with you.
This is a quick 10 minute salad that tastes great with any main meal.
It’s simple to put together and you can easily buy the ingredients. I like to use a variety of different types of tomatoes to make this, using large, medium, small and different colours of tomatoes.
1 kilo of tomatoes
250 grams of drained Mozzarella cheese
Few dill leaves
10 – 12 basil leaves
Juice from 1/2 lemon
1 tsp olive oil
Sea salt and black pepper to taste
To make the dressing:
Chop the basil leaves finely. Put this in a small bowl and mix in the lemon juice, olive oil, sea salt and black pepper.
Cut the tomatoes in different shapes, can be halves, quarters, slices or cubes and place in a bowl. Then mix in the dressing into the tomatoes.
Next, cut the mozzarella cheese and layer on top.
Lastly, cut the dill leaves and put on top. Mix the cheese and dill leaves into the tomatoes when you are ready to serve.
