Creamy Cauliflower Soup (Thai Style)

1 tbsp olive oil

3 lemongrass stalk

4 kaffir lime leaves

1 inch piece of ginger or galangal, chopped

3 cloves of garlic

1 onion, chopped

1 large cauliflower cut in small pieces

5 cups vegetable stock

Sea salt to taste

Red chili to taste

Black pepper to taste

Heat olive oil in a large saucepan over medium-high heat. Add onions and cook until they begin to turn golden. 
  Add the cauliflower and cook for about 2 minutes then add in the stock, lemongrass, lime leaves, ginger (or galangal), garlic, red chili, salt and pepper to taste and bring to a boil. Let it simmer for about 30 minutes. Cauliflower should be tender. 
 Puree the soup using a hand held blender until smooth.  Serves 4-5.
