This week I’m sharing a fruity chocolate treat recipe which you can make at home for yourself and also make to gift to family. It’s recipes like these that you can enjoy guilt free in my Five Day Sugar Free Challenge.
Cranberry Chocolate Balls
1 cup almond flour
1/2 cup shredded coconut
1/4 cup dried cranberries, chopped finely
2 tbsp honey
2-3 tbsp water
1/2-cup cacao powder
50 grams dark chocolate – to coat the balls
Blend the almond flour, shredded coconut and cacao powder for 30 seconds in the food processor.
Scrape the sides of the food processor and then add the honey, cranberries and water and blend for another 30 – 45 seconds until it forms a thick paste. Do not add too much water or it will be a very wet mixture.
Then take a small amount (about 1 tsp) and roll into balls. Will make about 14 cranberry balls.
Melt the dark chocolate over a pan of hot water. Roll the balls in the chocolate mix and then place the balls in a plate lined with baking paper.
Refrigerate to let the chocolate set, then store in a tightly sealed container in the fridge.
