If you are looking for an appetiser to make, you should definitely try this dip. It’s delicious, creamy and has a subtle smoky flavour to it. Plus once you add in the spices and herbs you have a beautiful blend of textures and flavours. All the ingredients are easily available and affordable too, add in cumin, paprika and fresh parsley for that extra zing. Yummy!
Plus, I’ve suggested what to do if you don’t have a gas cooker as can use the electric hob or oven/grill instead.
2 medium eggplants
1/4 cup tahini
3 garlic cloves, minced
Juice from ½ lemon
1 teaspoon ground cumin
¾ teaspoon paprika
Sea salt to taste
1 teaspoon extra virgin olive oil
2 tablespoons chopped fresh parsley
Cook the eggplant on a naked flame, cooking thoroughly till the skin burns and eggplant collapses. If you don’t have a gas cooker, then cook in a cast iron pan on an electric hob or under the grill. Let this cool then peel the skin off carefully.
Mash the eggplant to a paste. Add the tahini, garlic, lemon juice, cumin, paprika, salt and parsley and mix well.
Adjust sea salt and lemon juice to taste. Enjoy the baba ghanoush with vegetable sticks, tortilla chips or on a slice of toast.
