This is my go to salad for any season, simple, easy and so satisfying.  Love that I can prepare this earlier and just add the dressing before serving.  It tastes even better the next day and can add into a burrito or a wrap with some avocado.

Black Bean Salad:

Salad ingredients

1 1/2 cups black beans, cooked

1/2 cup sweetcorn

1 large tomato, diced

Handful of chopped coriander leaves

1/2 small onion, chopped

1/2 red pepper, chopped

 

Dressing:

Juice of 1 lemon

1 tsp extra virgin olive oil

2 garlic cloves, chopped finely

1 tsp cumin powder

1 tsp chopped green chili

1/4 tsp black pepper

1/4 tsp sea salt

Combine all the salad ingredients in a large bowl and mix in the dressing.  Can add diced avocado into this salad too.
