Cashew & Coconut Granola

Dry Ingredients
5 cups rolled oats
1 cup quinoa flakes
1 cup buckwheat flakes
1 cup coconut flakes
2 cups chopped cashew nuts
1 cup mixed seeds (pumpkin, sunflower, flax, etc)
¾ tsp sea salt

¾ cup cut dried cherries and blueberries

Wet Ingredients:
4 egg whites
¾ cup honey
1/3 cup coconut oil
 
 
Preheat the oven to 150°c. Line a baking dish with baking paper.
In a large bowl combine together all the dry ingredients.  Mix all the wet ingredients separately.  Pour this over the dry ingredients ensuring all dry ingredients are covered.  Spread the granola evenly onto a baking dish. Bake for 40 minutes, stirring and turning over once.
Remove from the oven and allow it to cool. Store in an airtight glass container for up to two weeks.
Granola can be had with milk, yogurt or even by itself.  Serving size ½ to 1 cup
