Sharing a recipe that can be made over Valentines, it’s delicious, quick and easy to make and healthy too.

You can have it either for breakfast, snack or dessert time and as you can see for yourself it is so simple to make.  Eating healthily should never be difficult, expensive or time consuming!

Coconut Chia Berry Pudding

1 cup coconut milk

1/4 cup hemp seeds

1/4 cup chia seeds

1 cup strawberries

5 almonds, chopped

Honey, optional and if you want it to be sweeter

In a bowl combine the milk, chia seeds and hemp seeds.  Pour this into two bowls or glasses and refrigerate overnight.

The next morning mash the berries with a fork.  Spoon this over the chia pudding and then layer the almonds over.

Serves 2.
