This week’s recipe is a very simple one and perfect for you, if you crave something sweet and don’t have much time to prepare it.

Remember to soak the dates before and this will take you less than 20 minutes to make from scratch.

Pistachio date balls

½ cup dates, pitted

½ cup oats

¼ cup pistachios, shelled

1 tbsp pistachios, shelled and grounded

1 tbsp shredded coconut

 

Soak the dates in water for an hour.

 In a food processor, blend the dates until makes a sticky paste.  Can add 1 tsp water is needed.  Then add in the ¼ cup pistachio nuts and oats and blend until makes a coarse mixture.

Take a tbsp of the mixture and roll into balls.  Then roll in either the shredded coconut or ground pistachio.  Makes 9 balls.  Store in the refrigerator.
