Diwali is a special occasion when we get together with family and friends.  If you celebrate Diwali and find you over indulge in the traditional Indian sweets why not try making a healthier “mithai” or sweet for yourself and those you love.

Sharing one of my favourite snack recipes below, which not only tastes delicious but is made with only 5 ingredients.

As you make your own bar feel free to adjust the dates to suit your taste buds.  Remember, as with all sweet foods watch your portions!

Love these nut, dates and cacao “chocolate” bars
200 grams almonds
150 grams pitted dates
75 grams desiccated coconut
5 teaspoons cacao powder
5 teaspoons coconut oil
 

Blend the nuts finely and put in a mixing bowl. Soak the dates in some water for 30-45 minutes so they are soft and moist.  Cut the dates and then blend the dates, coconut and cacao powder.  Using a spatula scrape down the mixture and process two to three times.  Then add this date mixture to the nuts and pour in the coconut oil and mix well.  If the mixture is dry you can add 1 to 2 tablespoons of water.
 
Lightly grease a tray with coconut oil and press this mixture into it. Let it set in the fridge overnight. Cut into squares and enjoy.  
Please note that these need to be stored in the refrigerator.
