Vegetable Lentil Patties

Wanted to share my vegetarian lentil patties recipe. Easy to make and freezes well so you can make a batch and have it when rushed for time. 
 
To make the patties:
1 ½ cups boiled green lentils
1 sweet potato, boiled and mashed
½ cup rice crumbs (might need slightly more or less!)
1 carrot, grated
1 onion, chopped finely
2 cloves of garlic, chopped finely
1 teaspoon lemon zest
Lemon juice to taste
½ teaspoon cayenne pepper
Sea salt to taste
 
Olive oil to pan fry
 
Mix all the patty ingredient until it is soft. Let the mixture sit for about 10 minutes for the rice crumbs to absorb the moisture. If the mixture is too wet add some more rice crumbs. However, you don’t want it too dry. Form the mixture into small balls and then press it down to make the patties, should form about 10. Can freeze the extra and use later.
 
Heat some oil in a skillet and pan-fry the vegetable burgers until brown and crispy.
Serve with salad or soup. Can have with home made tomato sauce.
