As we move into spring, the days are getting longer, but yet, it’s still quite cold and many of us don’t feel like having a regular salad and want something warmer. 

So, for those of you who want to have more of a plant based diet, which is nutritious and delicious, I have a quick, easy and simple warm edamame cabbage salad that you can make for lunch or dinner.

It’s colourful with the vibrant mix of colours and also a balanced meal as edamame is an excellent source of protein.

You have to try this satisfying and delicious salad.

Warm edamame and cabbage salad recipe

3 cups shredded purple cabbage

2 cups edamame beans (cooked)

2 cups pepper sticks

2 cups carrot sticks

1 small avocado, diced

½ tsp sesame seeds

¾ tbsp olive oil

1 tsp mustard seeds

¼ tsp dried thyme

Chili flakes to taste

Sea salt to taste 

Heat a large pan and add in the olive oil and then let the oil heat a little, then add in the mustard seeds and let them pop.  Then mix in the cabbage and cover with lid and let it cook for 2 minutes.

Then add in the carrot sticks and 2 tbsp water and mix.  Cover with lid and let it cook for another 2 minutes.

Next mix in the peppers and then cover and let it cook for a minute.

Then add in the edamame beans and mix in the spices and cover and let this cook for 3-4 minutes.  If you want it crunchier you can cook for less time.

Spoon into a bowl and layer the avocado and sesame seeds over.

Serves 2-3.
