Start the day right
Breakfast is a tricky meal, we want to eat well but are limited for time as we are busy getting ready for work and making sure the children are set for their day at school.
Below I share 3 quick breakfast recipes which I use when I want a quick, healthy and filling breakfast.
Grain Free Granola
1 cup mixed berries
8 cashews, whole or chopped
2 tbsp ground seeds (mix of sunflower, pumpkin, flax, etc)
Put all the ingredients in a bowl and have with milk, nut milk or rice milk. Can also have this with yogurt. Serves 1.
Breakfast Egg Bowl
2 boiled eggs
Handful of runner beans, blanched
5 cherry tomatoes, halved
3 slices of avocado
Place all the ingredients in a bowl. Squeeze some lemon juice over and season with sea salt and black pepper. Serves 1.
Can vary this and have other vegetables like broccoli or asparagus instead of the runner beans.
Three Grain Porridge
1/8 cup oats
1/8 cup quinoa flakes
1/8 cup buckwheat flakes
1 1/2 cups water
3/4 cup blueberries
1 tbsp pumpkin seeds
Honey – optional and to taste
In a pan combine the grains and water, bring to boil and then reduce the heat and simmer for 4-5 minutes until cooked. Pour the porridge into a bowl, add berries and the seeds. Can have with some honey if you want it sweeter. To make it creamy add milk. Serves 1.
