This week I am sharing a yummy snack recipe. Did you know that you can add more protein into your guacamole by including some edamame in it and this dips tastes so good and is perfect either on it’s own, with vegetable sticks or tortilla chips. It’s thick, creamy and chunky and I like to include green chili for an extra kick.

2 avocados, mashed
1 cup edamame,
2 tomatoes, diced
½ red onion, diced
Small bunch of coriander, finely chopped
Juice from 1 small lemon (or to taste)
1 green chili chopped finely (or to taste)
Sea salt to taste
1 tsp cumin powder
In a large bowl lightly mash the avocado, then add in the edamame beans and mash again until the beans are soft. Then add in all the other ingredients and combine well until the flavours are absorbed.
Serve with vegetable sticks or tortilla chips.
