Spicy vegetable khichdi is my go to comfort food which I enjoy having because it is quick, easy, light and delicious. I vary the vegetables and grains when making this one pot meal so never get bored of eating khichdi. It’s perfect for dinner, especially when it’s cold outside and enjoy eating it with some side salad. You can also add some yogurt and pickles to it.
