Home Made Vegan Granola

Dry Ingredients

5 cups rolled oats
2.5 cups chopped nuts (your choice of cashews, walnuts, almonds, etc)
2 cups pumpkin seeds and sunflower seeds
1 cup shredded coconut
¾ tsp cinnamon powder
½ tsp sea salt
¾ cup cut dried fruit (cherries, dates, plums, etc)

Wet Ingredients:
1/2 cup peanut butter
¾ cup honey
½ cup coconut oil
Preheat the oven to 150°c. Line a baking dish with parchment paper.

In a large bowl combine together all the dry ingredients. 
Add all the wet ingredients in a pan and heat on a low heat.  Pour this over the dry ingredients ensuring all dry ingredients are covered.   
Spread the granola evenly onto a baking dish. Bake for 30 minutes, stirring and turning over once. 
Remove from the oven and allow it to cool. Store in an airtight glass container for up to two weeks.
