Welcome to my Navratri recipe series!
It’s so important to include protein and vegetables in your meals during Navratri to keep your energy levels up while fasting.
Today, I’m sharing a super easy paneer salad recipe that’s packed with protein and refreshing veggies to help you feel satisfied and energised throughout the day.
Now, I know every family has their own set of rules for Navratri, so please make sure to check what vegetables are allowed in your fast before preparing this dish.
Let’s get started!
200g paneer
½ cup yogurt
Rock salt (if allowed)
Lemon juice, to taste
1 tsp cumin powder
¼ tsp black pepper
¼ tsp turmeric powder
Handful of baby spinach leaves
2 large tomatoes, diced
2 cups cucumber, diced
Soak the paneer in hot water for 10 minutes to soften.
While waiting, mix yogurt, cumin, black pepper, rock salt, and turmeric to make the marinade. Dice the paneer and add it to the marinade. Let sit for 10 minutes to absorb flavours.
Pan-fry the marinated paneer in oil until golden, turning occasionally.
Cover with a lid to cook through evenly.
Mix the cooked paneer with baby spinach, tomatoes, and cucumber.
This serves 2 and is perfect for Navratri.
