Today’s recipe is a pineapple and beetroot smoothie.
Beetroots are a good source of plant iron. And in order to help our body to absorb iron we also need vitamin C, which is available in the smoothie, as beets are also a source of vitamin C, and so are pineapple and kale or spinach.
Pineapple gives this smoothie a refreshing sweet taste, so you don’t need to add in any sugar.
I love it because it’s quick and easy to make with ingredients that are easy to find. If you don’t have kale readily available where you live, use baby spinach instead.
Ingredients:
2 cooked beetroots
1 cup pineapple
2 tsp chia seeds
2 tsp hemp seeds
1 1/2 cups natural yogurt
Handful baby spinach or kale
1/4 cup water
Blend until smooth and enjoy for breakfast or snack. If it’s too thick, please add more water as needed. Serves 2.
The mistake, I see many make when having smoothies is that are made just with fruit, which means they are high in sugar and even though fruits are a natural sugar, they may cause a sugar spike.
My smoothies are balanced as contain fibre, protein and healthy fats so leave you feeling satisfied.
